    The Sancerre The Haut Mesnil of Maison Drouet should be eaten fresh, but not frozen, at around 9 to 11 ° C, as an aperitif, with fish in sauce, or goat cheese.     The traditional Sancerre is extremely fruity. The Sauvignon grape has the inimitable fragrance of broom in bloom. It is very round, slightly beading, and so powerful that it leaves you an unforgettable memory for long minutes. This is the case for Sancerre "Le Haut Mesnil".
    The Sancerrois was the garden of the kings of France. It is now a prestigious land, in the heart of picturesque Berry. The village, built on a hill surrounding a magnificent castle, is the true reflection of the wines produced in this beautiful region.
    This white Sancerre is bottled on the property, with all the care necessary for this delicate operation, to respect the finesse and elegance of the product. The Sancerre "Le Haut Mesnil" is the work of great wine professionals, harvested on the Municipality of VERDIGNY, it combines elegance and tradition.
    The berries are harvested mechanically, and immediately pressed, to avoid oxidation. After the must has naturally rested, by the action of the cold, for about ten hours, the slow transformation begins, which will lead to this beautiful bottle.
    Vinification takes place in stainless steel vats under temperature control. This process allows to develop the characteristic aroma of the appellation. A racking will be necessary at the end of fermentation to improve the tannins. Then the wine will rest until the month of March following the harvest. It will then be analyzed, filtered and bottled, before a new shorter rest, which will allow it to arrive on your table in the best conditions.
